Ingredients
4 small whole wheat burritos
Olive oil to brush on burritos
4 slices of Monterey Jack cheese or cheddar (you can use pre sliced cheese)
1/4 cup canned black beans or canned refried beans (you can freeze the rest for more burritos later on or in a soup)
1/4 cup salsa
Method
Preheat oven to 400 degrees F.
Place each burrito on a large plate.
Spread each burrito with: one slice of cheese; 1 tablespoon of beans; 1 tablespoon of salsa.
Fold up each end of the burrito to secure.
Brush each burrito with olive oil.
Bake for 10 minutes on a cookie sheet or baking dish lightly sprayed with non stick
cooking spray.
Remove from the oven and place on a plate.
Serving suggestions: slices of avocado; salsa; salad; watermelon wedges; taco chips
Note: you can add canned corn or frozen to the burritos as well – about a tablespoon for each one.
Tip: You can freeze any unused portions and microwave for lunch or supper.
